I soak the noodles in hot water for 10 minutes-no need to boil them. I sit up an assembly line of little bowls of the ingredients and each diner can roll their own, or I can sit at a table and roll away. Bean sprouts cleaned are great in the salad rolls as is salad herbs like cilantro, Thai basil, and rau ram. Cutting the prawn/shrimp in half lengthwise and some pork shreds for the salad rolls gives them a special taste. Chiles optional and I find using chiles in the dipping sauces best.
If you don't overfill or over soak they won't have blow-outs.
