I add a horseradish chunk for crispness and dried chiles for flavour. According to the Ball Blue Book of Canning (the canning Bible) BWB process time is 10 minutes. Boiling water must cover by 1" the jars. Also it is imperative to use a jar rack to prevent the jars from clunkinmg against each other. The sealed pickles should rest in a dark cabinet for 6 months or more to develope flavours. Always use tempered canning jars do NOT reuse a mayo jar or such for canning.
