Great info on catfish. Salt water also works great if you don't want a lemon/acid taste. Catfish is very popular here in California and is readily available live or just dead, as well as filles. Many catfish farms in CA.
When I saw the ingredients I thought oh he will do a fried rice with chunks of catfish, chiles, and halved grapes (in place of the often used pineapple) in fried rice.
I love watching your videos trying to come up with a dish I would make. Sort of "A Ready Set Cook " approach on iFood.TV.
