Chopping Techniques video
Video DescriptionChopping is a basic knife technique, which involves cutting food into irregular ½ to 2 cm pieces which increases the surface area for quicker cooking, yet the pieces are large enough to hold their shape and texture.
For most chopping jobs, a sharp knife and a cutting board are your best tools. When you need to chop large amounts, or when you need to chop finely and the precise shape of the chop isn't important, a food processor saves time. To chop, cut the ingredient into several slices or slabs then line them up and cut crosswise into smaller pieces as required. And to keep foods from sticking when you chop, coat the blade with cooking spray.
