A quick and simple chicken tikka masala recipe. I did this in my restaurant for my ifood friends in a jiffy.

So what is the consensus? Is this recipe tomato soupy? Or is it more of a creamy sauce? The one I like in restaurants is creamy orange in color. I have not tried this recipe yet. But it would depend on the definition of what is good to you, and what is good to me, as to whether I would try it. I wrote it down for you. Please reply to my questions. To prepare chicken 2 lbs. chicken Mix with marinade. (Marinade: salt, cayenne pepper, chili flakes, ginger garlic paste, ground coriander powder, yogurt. Mix. Crush cashew nuts and zest lemon juice, cilantro, 1 t. red color. Wait 3 - 4 hours.) Grill or cook tandoori style, and 2T of olive oil on high heat 1T of ginger garlic paste Simmer. Take previously prepared chicken that has cooled, and cut into bite size pieces. Add 1/2 c. heavy cream Add pinch of Garam Masala spices 1 t. cayenne pepper Add prepared chicken Cook to boil. Near the end, add cilantro Now please add to your comments what you like, before saying that you like or dislike. I like a creamy orange sauce.

The comments about the base source are correct, its too thin. Chop two onions,one garlic bulb, one piece of ginger and a green chilli, fry until soft and then add 1 and half pints of water. (tip place garlic bulb in microwave for 45 seconds it makes it simple to peel)Simmer for an hour. Then crush two teaspoons of cumin seeds and two teaspoons or coriander seeds together. Fry them in a pan with one teaspoon of paprika and one and half of tumeric. When heated through add a tablespoon of tomato puree. Then add a tin of blended tomatoes cook for 20 mins. Then add both together and blend and then cook for another 20 mins. You will then have a good base source. Make in batches and freeze if needed. If you want it thicker add less to the pan and cook it down.

Thank you so much for sharing this great recipe!!! Been wanting to find the original recipe and happy I could find one. I tried some at WholeFoods in Ann Arbor, MI. It was fabulous too! But they also add lemon grass, cardamon dan some fure(something) leaves (forgot the name as I never heard of it before)? They didn't grilled the chicken for sure but the sauce was very thick and rich. What else can you put in there without overpowering the flavor? Thanks!!

The leaves which are added at the end (2 minutes before taking it off the stove) in the restaurant recipes are called fenugreek leaves (dry). They give a very delicious flavor and aroma to this dish as well as many other Indian/Pakistani dishes. Thanks so much for such an easy version of this recipe, I always searched for an easy version but was unable to find one. I'm sure this recipe tastes really good. Thanks a lot, will definitely try it soon. Someday I hope to have my own restaurant too... =)

Hey everyone. Same poster from Dec 13th. After making this dish many times i've changed a few things to "my" liking and thought i'd share a few tips. Chicken - Only use thighs. Marinade - Use half plain and half-Greek yogurt (sticks better to the chicken) Cooking - We don't own a Tandoor but grill A LOT. I use wood chips smokers to give the natural flavor. I also heat my grill to between 500 F - 600 F. Sauce - Replace the olive oil with ghee(clarified butter). - Use tomato paste diluted in 1 cup water. - Use more cream if needed. - Only uses "Vikas Khana" Gharam Masala - Get the dried spices and make it yourself! Chief Khana gives the full instructions in his Spice Room. - Lots and lots of finely chopped cilantro! - I'll be the first to admit I use 1-2 tsp sugar for sweetness. Cannot thank you enough for this recipe Chief Vikas! I've even made this as a side-dish for 50 people at a corporate event and it was a hit!

A few other things i forgot. - I use A LOT more Gharam Masala when making the sauce. (not a pinch). Makes a huge difference! This is worth all the prep time/cooking! Enjoy!!

In response to other reviewers, I have made this recipe (following the instructions) and lo and behold, it's the closest version of Chicken Tikka Masala I've come across... I want to remind readers that the type of Garam Masala used here is very, very important! So...why not use the type recommended by Chef Vikas himself. Do some Google-ing and you'll find it. I haven't bothered to make this, but I assume it'll taste like tomato soup, just like another commenter mentioned. To duplicate the restaurant style chicken tikka masala, you need to start with a base gravy, which is more than just pureed tomatoes. I've made chicken tikka masala many times from recipes similar to this, and every time it tastes like tomatoes and chicken. This is NOT the restaurant taste! If someone can show me a restaurant style chicken tikka masala recipe, I would be eternally grateful

The original recipe developed at a Glasgow curry house, did have tomato soup as the base for a "gravy". By the way, Cooks Illustrated had a very nice version of the famed dish in its September 2007 issue.

Ok, so... this one fresh chopped spice he adds several times "salamcha" for what I could make out, what's that? It looks either like coriander/cilantro or fresh mint but I would go with coriander. Oh, and what about the size of his chef bowls... half a cup? I'm from Germany and it's pretty hard to translate everything into the metric system. A cup equals a cup of 250ml, right ;)? Hi Maudy, there are a few things you can do to make the sauce thicker. You could add more heavy cream and cook it down until it thickens. You could also add a tbsp or two of cashew butter. The third thing you can do is to add some yogurt at the end of the cooking process. If you wish to have a more rich, buttery flavor, you could add some ghee which is an indian clarified butter, available at most health food stores.

Wow chicke tikka masala , that is almost a sure order everytime I go for an Indian dinner. Chicken tikka masala paired with butter naan is just too good to be true. Chicken marinated in tandoori masala and I like the chiekn tikka done in the tandoor the slightly burnt edges add a great taste to the curry.

FABULOUS video!!! Thank you Chef Vikas Khanna, I can't wait to try your recipe as it is my husband's favourite and I never seem to make it as good as our fav Indian restaruant, and now they have closed and moved their market into the spot, which is very nice to have a large S. Indian Market just 10 minutes away. BUT missing their Chickn Makhani so much. I use wood smoker to make the tandoor style chicken and it is very moist and tasty-so it is the sauce that I don't get the right taste. You make it look so easy.

Chicken tikka masala and butter chicken are not the same recipes. Butter chicken is not roasted, while chicken tikka is first roasted in a tandoor or a hot oven and then marinated and made. It also has a healthier curry base than butter chicken. So when I am watching what I am eating and want to try something exotic I always order chicken tikka masala :-D
