I have a simple philosophy about food... It should be tasty and simple to prepare. But most of all, cooking should be FUN!!! I don't use alcohol in my cooking but I'll point out where wine could be added for extra subtle flavours. I don't claim that the recipes here are the "definitive" versions of dishes; they are "typical" versions that I enjoy cooking and work for me.
