 Butter3 Tablespoon
 Garlic1 Clove (5gm), chopped
 Onion1 , chopped
 Cauliflower1/4
 Carrots2 , peeled
 Celery stalks2
 Leek, washed thoroughly 1
 Potato1 , peeled
 Spinach1 Cup (16 tbs)
 Tomatoes2 , peeled
 Chicken stock1 Quart
 Salt1/2 Teaspoon
 Pepper1 Pinch
 Cayenne Pinch
 Parsley1 Tablespoon
 Parmesan1 Tablespoon, grated

Directions

Heat butter in a large pot and cook garlic and onion for 5 minutes.
Wash and chop the vegetables.
Add to the pot and cook for 5-7 minutes.
Add stock and seasonings, and cook gently for 30-45 minutes.
When ready to serve, stir in parsley.
Spoon into bowls and sprinkle grated cheese on top.
