Zuppa Di Legumi Recipe

Ingredients
| Butter | 3 Tablespoon | |
| Garlic | 1 Clove (5gm), chopped | |
| Onion | 1 , chopped | |
| Cauliflower | 1/4 | |
| Carrots | 2 , peeled | |
| Celery stalks | 2 | |
| Leek, washed thoroughly 1 | ||
| Potato | 1 , peeled | |
| Spinach | 1 Cup (16 tbs) | |
| Tomatoes | 2 , peeled | |
| Chicken stock | 1 Quart | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1 Pinch | |
| Cayenne Pinch | ||
| Parsley | 1 Tablespoon | |
| Parmesan | 1 Tablespoon, grated | |
Directions
Heat butter in a large pot and cook garlic and onion for 5 minutes.
Wash and chop the vegetables.
Add to the pot and cook for 5-7 minutes.
Add stock and seasonings, and cook gently for 30-45 minutes.
When ready to serve, stir in parsley.
Spoon into bowls and sprinkle grated cheese on top.
