Zuppa Pavese Recipe

Zuppa Pavese is one dish which you cannot resist making again and again. The French Zuppa Pavese is amazingly appetizing as an Appetizer for meals. The primary ingredient in this is Eggplant Eggs. Just try this dish and see how you get hooked to it!

Ingredients

 
5 cups Beef or Chicken
 
Consomme
 
Salt to taste
 
4 thick slices sourdough or Italian bread, fried in olive oil
 
4 small eggs
 
Paprika
 
Italian parsley sprigs

Directions

Bring consomme to boil Season with salt.
Place a slice of bread in each of 4 bowls, carefully break an egg onto each, and gradually pour hot soup over the egg to cook it slightly.(Poach the eggs first if you prefer them cooked solid.)
