Zuppa Crema Di Polio Recipe
Ingredients
| Cornflour | 2 Tablespoon (Leveled) | |
| 1 pint cold brodo misto | ||
| 1/2 breakfast cup cooked chicken, cut into strips | ||
| Double cream | 1/4 Pint | |
| Egg yolks | 2 | |
| Grated nutmeg | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
A handsome, creamy soup for elegant eating.
Mix the cornflour (cornstarch) to a smooth liquid with a little brodo misto.
Add the rest of the brodo misto and cook, stirring continuously, until the soup comes to the boil and thickens.
Season to taste with salt and pepper then add the chicken.
Simmer for 7 minutes.
Beat the cream and egg yolks well together.
Pour into the soup and re-heat gently without boiling.
