Zucchini With Peppers Recipe
|Stale bread slices||2 , cubed|
|Sweet red pepper||1 , cut in strips|
|Green pepper||1 , cut in strips|
|Celery||1⁄2 Cup (8 tbs), thinly sliced|
|Onion||1 Small, chopped|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Zucchini||3 Cup (48 tbs), sliced|
|Garlic salt||1 Teaspoon|
|Fresh ground pepper||1⁄4 Teaspoon|
|Parmesan cheese||1⁄4 Cup (4 tbs), grated|
|Medium cheddar cheese||1⁄4 Cup (4 tbs), grated|

Remove bread and set aside.
Add red and green peppers, celery, onion, and oil; saute until onion is golden.
Add sliced zucchini, garlic salt, and pepper.
Cover; cook very slowly for 15 minutes or until zucchini is tender, stirring occasionally.
Sprinkle bread cubes over vegetables.
Combine parmesan and cheddar cheeses; sprinkle on top; then put uncovered under broiler until bread cubes are browned and cheese is melted.
