Zucchini Walnut Bread Recipe
Ingredients
| 1 cup walnuts cut in pieces | ||
| Eggs | 4 standard | |
| Sugar | 2 Cup (16 tbs) | |
| Oil | 1 Cup (16 tbs) | |
| Unsifted flour | 3 1/2 Cup (16 tbs) | |
| Baking soda | 1 1/2 Tablespoon | |
| Salt | 1 1/2 Tablespoon | |
| Baking powder | 3/4 Tablespoon | |
| Cinnamon | 1 Tablespoon | |
| Grated zucchini | 2 Cup (16 tbs), pared | |
| Raisins | 1 Cup (16 tbs) | |
| Vanilla | 1 Tablespoon | |
Directions
Beat eggs gradually adding sugar.
Add oil, combine dry ingredients and add to mixture, alternating with zucchini.
Stir in raisins, walnuts and vanilla.
Turn into 2 greased and lightly floured loaf pans, 9" x 5" x 2 3/4".
Bake at 350° for about 55 minutes.
Let stand 10 minutes, then place on wire racks to cool.
