Ingredients

 1 cup walnuts cut in pieces
 Eggs4 standard
 Sugar2 Cup (16 tbs)
 Oil1 Cup (16 tbs)
 Unsifted flour3 1/2 Cup (16 tbs)
 Baking soda1 1/2 Tablespoon
 Salt1 1/2 Tablespoon
 Baking powder3/4 Tablespoon
 Cinnamon1 Tablespoon
 Grated zucchini2 Cup (16 tbs), pared
 Raisins1 Cup (16 tbs)
 Vanilla1 Tablespoon

Directions

Beat eggs gradually adding sugar.
Add oil, combine dry ingredients and add to mixture, alternating with zucchini.
Stir in raisins, walnuts and vanilla.
Turn into 2 greased and lightly floured loaf pans, 9" x 5" x 2 3/4".
Bake at 350° for about 55 minutes.
Let stand 10 minutes, then place on wire racks to cool.
