Zucchini Tacos Recipe
Ingredients
Vegetable oil 1 teaspoon
Lean ground beef 1/4 pound
Onion 1 small, finely chopped
Zucchini i medium, diced
Green chilies 1/4 cup chopped
Tomatoes 2, quartered
Taco sauce 1 cup
Taco shells
Yellow cheese grated
Lettuce shredded
Onion sliced
Directions
Heat oil in skillet; add crumbled ground beef and cook until meat loses its pink color.
Drain off fat.
Add onion, zucchini, green chilies, and tomatoes.
Cook slowly until zucchini is tender.
Add taco sauce; reheat.
Serve in heated taco shells garnished with cheese, lettuce, and onion.
