Ingredients
| 2 large zucchini squashes, unpeeled cut into 1/2 inch slices | ||
| 1 cup canned tomatoes well drained | ||
| Olive oil | 1 Tablespoon | |
| Onion | 1 Small, chopped | |
| Garlic | 1 Clove (5gm), minced | |
| Salt | 1/2 Teaspoon | |
| Basil | 1/2 Teaspoon | |
| Ground black pepper | 1/4 Teaspoon | |
| Parmesan cheese | 2 Tablespoon, grated | |
Directions
Combine all ingredients except cheese in the slow cooker.
Cover and cook on low 4 to 5 hours.
Sprinkle with cheese just before serving.
