Ingredients

 
1 1/2 lb (750 g) zucchini, sliced
 
1/4 cup (62.5 g) butter or margarine
 
2 onions, sliced salt
 
8 cups (2 liters) water
 
4 eggs
 
1/4 cup (30 g) grated Parmesan cheese
 
pepper
 
1 teaspoon basil

Directions

Melt the butter or margarine in a saucepan and saute the onions until golden brown.
Add the zucchini and brown.
Season with salt and add the water.
Bring to a boil.
Reduce heat and simmer, covered, for 1/2 hour.
Beat the eggs with the cheese, pepper and basil.
Bring the soup back to a boil and, stirring constantly, add the egg and cheese mixture.
Simmer for a few minutes until the eggs are cooked.
Serve topped with Parmesan cheese.
