Zucchini Soup Recipe
Zucchini Soup is simply irresistible, to say the least! Try this easy to prepare Zucchini Soup; I am sure you'll have a huge fan following for this one.
Ingredients
1 lb zucchini, trimmed and sliced 500 g
1 large onion, chopped
2 cups chicken stock 500 mL
1 tsp salt 5 mL
1/4 tsp white pepper 1 mL
1 tbsp butter 15 mL
2 cups light cream 500 mL
3 tbsp chopped green onion 50 mL
Directions
In large saucepan, combine zucchini, onion, stock, salt and pepper; cook gently for 8 to 10 minutes or until zucchini is tender.
Let cool slightly and transfer to blender; puree until mixture is smooth. (Recipe can be prepared ahead to this point and refrigerated.)
Return soup to pan and stir in butter and cream.
Heat gently until hot.
Pour into bowls or mugs and sprinkle each serving with green onion.
