Zucchini Relish Recipe
Ingredients
| Zucchini | 10 Cup (160 tbs), chopped | |
| Onions | 4 Cup (64 tbs), chopped | |
| Salt | 5 Tablespoon | |
| Cider vinegar | 2 1⁄4 Cup (36 tbs) | |
| Sugar | 6 Cup (96 tbs) | |
| Nutmeg | 1 Tablespoon | |
| Turmeric | 1 Tablespoon | |
| Cornstarch | 2 Tablespoon | |
| Celery seed | 2 Tablespoon | |
| Pepper | 1⁄2 Teaspoon |
Directions
Grind zucchini and onions; add salt.
Let stand overnight.
Drain; rinse in cold water.
Drain thoroughly.
Add remaining ingredients; cook for 30 minutes, stirring frequently.
Seal in sterilized jars.
