Zucchini Provencal Recipe

Ingredients

 
1 small onion, sliced
 
2 tablespoons vegetable oil
 
2 medium zucchini, cut into small cubes
 
2 tomatoes, peeled and quartered
 
1/3 cup diced green pepper
 
1 small clove garlic, crushed
 
Salt and pepper to taste
 
Grated Parmesan cheese
 
Chopped parsley (optional)

Directions

Saute onion in oil in a skillet until tender.
Stir in zucchini, tomatoes, green pepper, garlic, and seasonings; cover and cook over medium heat 10 to 12 minutes or until vegetables are tender, stirring occasionally.
Transfer vegetables to a serving dish, and sprinkle with cheese and parsley, if desired.
