Zucchini Pie (Torta Di Zucchini) Recipe
Ingredients
1 lb (500 g) zucchini, sliced
2 tablespoons (40 g) butter or margarine
1 medium onion, chopped
1/2 cup (30 g) fresh bread crumbs
1/2 cup (30 g) grated Parmesan cheese
salt and pepper
6 eggs, beaten
2 tablespoons (40 g) butter or margarine
How to make Zucchini Pie (Torta Di Zucchini)
Saute the zucchini and onion in two tablespoons of butter or margarine for about ten minutes.Mix together the zucchini, onion, bread crumbs, cheese, salt and pepper to taste and the eggs.
Melt butter or margarine in a large frypan.
Pour in the zucchini and egg mixture and cook without stirring until the bottom is set.
Put frypan under hot broiler to cook the top.
