Zucchini Pie Recipe

Ingredients

 
2 1/2 lb. zucchini
 
2 tbsp. butter
 
1 c. diced Velveeta cheese
 
Salt and pepper to taste
 
8 saltines, crumbled

Directions

Trim ends from zucchini; cut into small chunks.
Boil in small amount of water for 10 minutes or until just tender; drain thoroughly.
Add butter and cheese; stir until melted.
Add salt and pepper.
Turn into greased 10-inch pie plate; top with saltine crumbs.
Bake at 400 degrees for 15 minutes.
