Zucchini Muffins Recipe

Zucchini Muffins was my family cook's signature dish, now that he's gone I have taken up the task of preparing it for the family. Make this Zucchini Muffins for your family today to let them know that how much you love them.

Ingredients

 
1 cup all-purpose flour
 
1/2 cup whole wheat flour
 
1 1/2 teaspoons baking powder
 
1/4 teaspoon baking soda
 
1/8 teaspoon salt
 
2 teaspoons ground cinnamon
 
1 egg, beaten
 
1 cup grated zucchini
 
2/3 cup honey
 
1/3 cup vegetable oil
 
1 teaspoon vanilla extract
 
3/4 cup chopped walnuts

Directions

Combine dry ingredients in a mixing bowl, make a well in center.
Combine egg, zucchini, honey, oil, and vanilla, mixing well; add to dry ingredients, stirring just until moistened.
Stir in walnuts.
Spoon into greased muffin pans, filling two-thirds full.
Bake at 400° for 18 minutes.
