Zucchini Low Fat Muffins Recipe
Ingredients
1/2 cup whole wheat flour
1/2 cup white flour
2 tsp baking powder
1/2 cup sugar
1 egg white
1/2 cup skim milk
1/2 cup zucchini, grated (or carrots)
Vegetable spray
Directions
Combine flours, baking powder and sugar, mix well.
Beat egg white until foamy and add milk and zucchini.
Add egg white and zucchini mixture to flour mixture.
Stir just to moisten.
Spray muffin tin with vegetable spray.
Fill cups.
Bake at 375°F for 15 to 20 minutes.
