Zucchini-Lemon Muffins Recipe
All I can say about this Zucchini-lemon Muffins is YUM! There is not a single month when I don't serve this yummy Side Dish! Vegetable is one of the few ingredients I like to include in my daily cooking and this is my comfort recipe that I usually prepare using it. You will fall head over heels in love with this easy and delectable Zucchini-lemon Muffins recipe as soon as you try it!
Ingredients
2 cups all purpose flour
1/2 cup sugar
1 tablespoon baking powder
2 teaspoons grated lemon rind
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup shredded zucchini
3/4 cup skim milk
3 tablespoons vegetable oil
1 large egg
Cooking spray
Directions
Preheat oven to 400°.
Combine flour, sugar, baking powder, lemon rind, salt, and nutmeg in a bowl; make a well in center of mixture.
Combine zucchini, milk, oil, and egg; stir well.
Add to dry ingredients, stirring just until moist.
Divide batter evenly among 12 muffin cups coated with cooking spray.
Bake at 400° for 20 minutes or until golden.
Remove muffins from pan immediately; let cool on a wire rack
