Zucchini In Agrodolce Recipe
Ingredients
Zucchini 6 large, trimmed and cut into quarters lengthwise
Olive oil 2-1/2 tablespoons
Garlic clove 1, crushed
Wine vinegar 2-1/2 tablespoons
Water 2-1/2 tablespoons
Pine nuts 2 to 3 tablespoons
Seedless white raisins 2 to 3 tablespoons
Salted anchovies 2, chopped

Directions
Prepare zucchini.
Heat oil in large skillet; saute garlic and discard.
Add zucchini; cover pan and cook a few minutes.
Add vinegar and water; cook over moderate heat 10 minutes.
Add nuts, raisins, and washed and chopped anchovies.
Salt to taste.
Cook 2 to 3 minutes longer.
