Korean Food: Zucchini Fritters (호박전=HoBak Jeon) Recipe Video

This is a simple version of Korean zucchini fritters. Typically, we cover sliced zucchini pieces with flour, and then dip them into an egg mixture before frying them. However, today I will just dip the zucchini into a flour batter. You can eat these delicious zucchini fritters plain, but slightly dipping them into a soy sauce mixture makes them tasty even better. It is good for a lunch box, party appetizer, or as a side dish for normal meals. If you are a vegetarian, you can skip the egg and add a little bit more water to the batter.

Editors Review

There are so many different kinds of Korean Jeon and in fact you can make your own version by adding your own choice of vegetables, seafood, meat or just about anything! Try this recipe of Hobak jeon or in simple words, zucchini pancakes. These aren’t sweet as you may think they are, and they are not eaten for breakfast or dessert like other pancakes are. Serve these crispy brown pancakes with a dipping sauce as a party appetizer or snack. It’s also a great way to get kids to eat zucchini.
