Zucchini-Cauliflower Sweet Relish Recipe
Ingredients
| Zucchini | 10 Cup (16 tbs) | |
| Cucumber | 4 Cup (16 tbs) | |
| Onions | 4 Medium | |
| 2 Small Heads Cauliflower, ground | ||
| Water | 1 1/2 Cup (16 tbs) | |
| Salt | 3 Teaspoon | |
| Vinegar | 3 Cup (16 tbs) | |
| Sugar | 5 1/4 Cup (16 tbs) | |
| Dry mustard | 11/3 Tablespoon | |
| Turmeric | 1 1/3 Tablespoon | |
| Pepper | 1 Tablespoon | |
| Celery seed | 2 2/3 Tablespoon | |
| Nutmeg | 1 1/3 Tablespoon | |
Directions
Grind the above vegetables.
If using large zucchini, remove seed before grinding.
After you have ground everything, put in large container, add salt and water.
Cover and let stand overnight.
Next morning drain, and add ALL spices and vinegar and sugar.
Bring to a light boil and cook 30 minutes.
Pour into hot sterile jars.
