Ingredients

 
1 pound small zucchini
 
2 cups chicken stock or canned chicken broth
 
1 pound small summer squash
 
1/4 cup butter
 
2/3 cup whipping cream
 
1/4 cup shallot, minced
 
Salt and white pepper

Directions

Wash and trim the zucchini and summer squash but do not peel them.
Reserve 4 thin slices off the tip end of 1 zucchini and 1 summer squash for garnish.
Slice the rest of the squash in 1/2 inch pieces.
Melt the butter in a saucepan.
Add the shallot and squash and saute over medium heat for 5 minutes.
Do not brown.
Add the chicken stock and simmer for 10 minutes or until the squash is tender.
Drain the squash, reserving the liquid.
Puree the squash in a food processor or blender.
Combine the pureed squash with the reserved liquid.
Return to the heat and add the cream.
Do not boil.
Add salt and white pepper to taste.
Garnish with the reserved slices of zucchini and summer squash.
