Ingredients
| Onion | 1/2 Cup (16 tbs), minced | |
| Butter/Margarine | 1/2 Cup (16 tbs) | |
| Green pepper | 1/2 Cup (16 tbs), minced | |
| Zucchini | 2 Pound, sliced | |
| 3 cups peeled, seeded, and chopped tomatoes | ||
| Salt | 1 Teaspoon | |
| Sliced mushrooms | 1/2 Teaspoon, undrained | |
| 1 pound ziti or other short pasta | ||
Directions
Saute onion in hot butter for 2 minutes.
Add all other ingredients except ziti.
Cover and cook over low heat for about 30 minutes, stirring frequently.
Zucchini slices should be tender, but still preserve their shape.
Serve on hot cooked ziti.
