 Onion1
 Garlic1 Clove (5gm)
 Butter2 Tablespoon
 Oil3 Tablespoon
 Tomatoes8 Ounce
 Dried basil1/4 Teaspoon
 Zucchini4
 Flour2 Tablespoon
 Mozzarella cheese1/4 Pound
 Salt To Taste
 Pepper To Taste

Directions

GETTING READY
1) Peel and finely chop onion.
2) Peel and crush garlic.
3) Drain tomatoes.
4) Trim and slice zucchini.
5) Thinly slice Mozzarella.

MAKING
6) In a skillet, heat butter and 1 tbsp oil and fry onion and garlic till transparent.
7) Add tomatoes to pan with basil and cook over a low heat for 20 minutes.
8) In a blender or food processor puree mixture.
9) Coat zucchini slices with flour.
10) In another skillet, heat remaining oil and fry zucchini till lightly golden and tender.
11) Drain on paper towels and season with salt and pepper.
12) In a serving dish, layer zucchini, Mozzarella and tomato sauce.
13) Chill for 2-3 hours.

SERVING
14) Serve with hot garlic bread or toast and butter curls.
