Zucchini With Apples Recipe
Ingredients
| 1 1/2 lb small zucchinis, thinly sliced | ||
| Butter/Margarine | 4 Tablespoon | |
| Onion | 1 Medium, chopped | |
| Eating apples | 2 , chopped | |
| 2 fresh tomatoes, peeled and chopped | ||
| Parsley | 2 Tablespoon, chopped | |
| Ground black pepper | 1 To taste | |
| Salt | To Taste | |
Directions
Set a small pan of water to boil.
Drop the zucchini slices into the boiling water for 30 seconds.
Remove immediately and drain.
Melt the butter in a frying pan and saute the onion until it is transparent.
Add the apples and stir well to coat with the butter.
Add the tomatoes and the blanched zucchini.
Stir well, then add the parsley.
Season this mixture and leave it to cook, covered, over a gentle heat for 5-10 minutes, until the zucchinis are soft.
