3 tablespoons butter or margarine
2 medium-sized zucchini (about 8 ounces each), shredded
3 slices white bread
1 egg
2 ounces Swiss cheese, shredded
1/8 teaspoon pepper

1 3-pound broiler-fryer, cut into quarters
2 tablespoons honey
Directions
1. Prepare stuffing: In 2-quart saucepan over medium heat, melt butter or margarine; add zucchini and cook, stirring frequently, until tender, about 2 minutes. Remove from heat. Into saucepan, tear bread into small pieces; stir in egg, cheese, pepper, and 1/2 teaspoon salt.
2. Preheat oven to 400°F. Carefully push fingers between skin and meat to form a pocket; place some stuffing in each pocket. Place chicken, stuffing side up, in 13" by 9" baking pan; bake 50 minutes or until tender. Brush with honey and sprinkle with salt.
