Zucchini Squash Patties Recipe
Ingredients
| Zucchini | 3 1/2 Cup (16 tbs), grated | |
| Onion | 2 Tablespoon, grated | |
| Parsley flakes | 1 Tablespoon | |
| Parmesan cheese | 3 Tablespoon, grated | |
| 1 cup soft breadcrumbs | ||
| Salt | 3/4 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Eggs | 2 , Well beaten | |
| Fine dry breadcrumbs | ||
| Melted butter or margarine | ||
Directions
Squeeze liquid out of zucchini with hands.
Combine zucchini, onion, parsley, cheese, 1 cup breadcrumbs, salt, pepper, and eggs.
Shape into patties and cover with dry breadcrumbs.
Place on a greased cookie sheet; brush with melted butter.
Bake at 350° for 30 to 40 minutes or until golden brown. (Patties can be browned in skillet in butter.)
