Zucchini Soup Recipe
Ingredients
| 6 medium-sized zucchini | ||
| Bacon | 1/4 Pound, cut in half | |
| Salt | 1/2 Teaspoon | |
| Garlic powder | 1/2 Teaspoon | |
| Mixed herbs | 1/2 Teaspoon | |
| 2 10-oz. cans regular-strength beef broth plus | ||
| 2 cup water, or 2 tsp beef stock base plus | ||
| 1 tsp beef bouillon plus | ||
| 4 cup water or 4 cup homemade broth | ||
Directions
Wash zucchini, remove ends, and cut into chunks.
Put zucchini and bacon into a pot with the remaining ingredients.
Cook 15-20 minutes, or until zucchini is soft.
Remove bacon.
Whirl soup in blender or food processor with steel blade, or put through a sieve.
Reheat to serve.
