Ingredients
| 6 cups sliced zucchini, 1/4 inch thick, about 2 lbs. | ||
| Water | 1/4 Cup (16 tbs) | |
| Olive oil | 1/4 Cup (16 tbs) | |
| White wine vinegar | 2 Tablespoon | |
| Salt | 1 Teaspoon | |
| Pepper white | 1 Teaspoon | |
| Sugar | 1/2 Teaspoon | |
| Parmesan cheese | 1/4 Cup (16 tbs), grated (Salad greens) | |
Directions
In 2-quart casserole, combine zucchini and water.
Cover.
Microwave at High for 6 to 8 minutes, or until zucchini is tender-crisp, stirring twice.
Drain.
Set aside.
In 1-cup measure, blend olive oil, vinegar, salt, white pepper and sugar.
Pour oil and vinegar mixture over zucchini.
Recover.
Chill for 4 to 5 hours, stirring occasionally.
Cover.
