Ingredients

 6 cups sliced zucchini, 1/4 inch thick, about 2 lbs.
 Water1/4 Cup (16 tbs)
 Olive oil1/4 Cup (16 tbs)
 White wine vinegar2 Tablespoon
 Salt1 Teaspoon
 Pepper white 1 Teaspoon
 Sugar1/2 Teaspoon
 Parmesan cheese1/4 Cup (16 tbs), grated (Salad greens)

Directions

In 2-quart casserole, combine zucchini and water.
Cover.
Microwave at High for 6 to 8 minutes, or until zucchini is tender-crisp, stirring twice.
Drain.
Set aside.
In 1-cup measure, blend olive oil, vinegar, salt, white pepper and sugar.
Pour oil and vinegar mixture over zucchini.
Recover.
Chill for 4 to 5 hours, stirring occasionally.
