Ingredients
Baby zucchini - 1 3/4 lb
All purpose flour
Butter - 1/4 cup
Sunflower oil - 3 tbsp
Light cream - 1/2 cup
Parsley - 1 1/2 tbsp, chopped
Mint - 1 1/2 tbsp, chopped
Salt
Pepper
Directions
GETTING READY
1 Trim off the ends of the zucchini.
2 Wash and dry them and cut into thick rounds.
3 Lightly dust a bowl with flour and put the zucchini in it.
4 Coat the pieces, turning them lightly in the flour.
MAKING
5 In a large skillet, heat the butter with the oil.
6 Add the zucchini pieces, leaving the unwanted flour behind in the bowl.
7 Fry over moderately high heat for 2-3 minutes, stirring continuously.
8 Reduce the heat to low.
9 Cover and cook gently for about 10 minutes, stirring occasionally, until the zucchini are tender but still crisp.
10 Season with a little salt and pepper.
11 Stir in the cream, parsley, and mint and continue cooking while stirring gently over low heat for 1-2 minutes.
SERVING
12 Serve hot.
