Zucchini Relish Recipe
Ingredients
10 cups chopped zucchini
4 cup sugar
2 Tbsp. cornstarch
2 tbsp. celery seed
1/2 tsp. pepper
2 tsp. dry mustard
1 Tbsp. turmeric
2 1/2 cup apple cider vinegar
1 tbsp. nutmeg
Few drops green food coloring (optional)
Directions
Boil all ingredients 30 minutes.
Pack into hot jars and process 10 minutes in hot water bath to seal.
This should be canning salt which comes without additives to prevent caking.
Additives cause pickles to soften and become cloudy.
