Zucchini Pickles Recipe

Ingredients
10 cups thinly sliced zucchini
2 1/2 cups cider vinegar
1 1/2 cups sugar
1 tablespoon salt
2 teaspoons dry mustard
2 teaspoons ground turmeric
1/2 teaspoon celery seed
1/8 teaspoon powdered alum
2 large onions, thinly sliced
Directions
Thoroughly scrub the zucchini, but do not peel; cut in thin slices.
In a large kettle, combine the vinegar with the sugar, salt, dry mustard, turmeric, celery seed, and alum.
Add the thinly sliced zucchini and onion.
Bring to a boil and simmer for 15 to 20 minutes, or until the squash becomes semi-transparent.
Pour the zucchini mixture into hot, sterilized jars; seal immediately.
