Zucchini Patties Recipe
Ingredients
| 5 medium-sized zucchini | ||
| Eggs | 3 | |
| Parmesan cheese | 1 Tablespoon, grated | |
| Garlic | 2 Clove (5gm), mashed | |
| Flour | 2 Tablespoon | |
| Parsley | 1/2 Cup (16 tbs), finely chopped | |
| About 1/2 cup olive oil or salad oil | ||
| 1 teaspoon each salt and pepper | ||
| 1 teaspoon each salt and pepper | ||
Directions
Thoroughly scrub the zucchini; remove both ends, but do not peel.
Coarsely shred the zucchini into a bowl; press out and remove the water.
Mix the dry zucchini with the unbeaten eggs, Parmesan, garlic, flour, parsley, salt, and pepper.
Meanwhile heat a small amount of olive oil in a frying pan.
Use a tablespoon to shape heaping spoonfuls of the zucchini mixture into patties.
Saute in the hot oil until lightly browned on both sides.
