Quick Zucchini Parmesan Recipe
Ingredients
| Olive oil | 1 Tablespoon | |
| Butter/Margarine | 1 Tablespoon | |
| 1/2 small onion or 3 to 4 shallots, finely chopped | ||
| Zucchini | 3 , sliced | |
| 1/2 teaspoon dried oregano or marjoram | ||
| Ground black pepper | 1 To taste | |
| Parmesan and romano cheese | 1/4 Cup (16 tbs), grated | |
| Salt | To Taste | |
Directions
In saute pan, heat olive oil and butter.
Saute onion or shallots about 3 minutes or until wilted.
Add zucchini and cook, stirring frequently, about 4 minutes until barely tender.
Add lemon juice, oregano, salt, and pepper.
Serve garnished with cheese.
