 Olive oil1 Tablespoon
 Butter/Margarine1 Tablespoon
 1/2 small onion or 3 to 4 shallots, finely chopped
 Zucchini3 , sliced
 1/2 teaspoon dried oregano or marjoram
 Ground black pepper1 To taste
 Parmesan and romano cheese1/4 Cup (16 tbs), grated
 Salt To Taste

Directions

In saute pan, heat olive oil and butter.
Saute onion or shallots about 3 minutes or until wilted.
Add zucchini and cook, stirring frequently, about 4 minutes until barely tender.
Add lemon juice, oregano, salt, and pepper.
Serve garnished with cheese.
