Zucchini Pancakes Recipe

Ingredients

 
1 medium zucchini
 
1 cup (250 ml) Cheddar cheese cubes (1-inch or 2.5 cm), chilled
 
2 eggs
 
1/2 cup (125 ml) milk
 
2/3 cup (200 ml) biscuit mix
 
1/4 cup (50 ml) wheat germ
 
1/4 cup (50 ml) grated Parmesan cheese
 
1/4 teaspoon (1 ml) pepper

Directions

Assemble Salad Maker with Shredder Disc and large mixer bowl.
Shred zucchini.
Assemble Blender.
Cover blender container and set at BLEND.
With motor on, remove feeder cap and drop cheese cubes into container.
Put in bowl with zucchini.
Put remaining ingredients into blender container in order listed.
Cover and process at MIX until well combined.
Pour over zucchini and cheese; mix with a spoon.
Ladle onto a buttered hot griddle over medium heat; cook, browning both sides.
