Zucchini Pancakes Recipe

| Biscuit baking mix | 2 Tablespoon | |
| Parmesan cheese | 3 Tablespoon, grated | |

| Cooking oil | 1 Tablespoon | |
Directions
In a bowl, combine zucchini, egg, biscuit mix, cheese and pepper.
Heat oil in a skillet over medium heat; drop batter by 1/4 cupfuls and flatten.
Fry until golden brown; turn and cook the other side.
