Zucchini Nut Cake Recipe

Ingredients
2 1/2 cups all purpose flour
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon pumpkin pie spice
3/4 cup vegetable shortening
2 cups sugar
3 eggs
3 squares unsweetened chocolate, melted
1/2 cup milk
1 teaspoon vanilla
1 1/2 cups shredded raw zucchini
3/4 cup chopped walnuts 10X sugar
Directions
1. Sift flour, baking powder, baking soda, salt and pumpkin pie spice onto wax paper.
2. Beat shortening and sugar until fluffy in the large bowl of electric mixer at high speed. Beat in eggs until well blended; turn speed to low; blend in chocolate. Combine milk and vanil la in a 1-cup measure.
3. Add flour mixture, alternately with milk, until well blended. Fold in zucchini and nuts, just until blended Spoon batter into a well greased and floured 12-cup fluted tube pan or a 9-inch angel cake tube pan.
4. Bake in moderate oven (350°) 1 hour, or until a wooden pick inserted near center comes out clean; cool in pan on wire rack 15 minutes. Loosen cake around edge and tube with a narrow spatula; invert onto wire rack Cool completely. Allow to ripen for 1 day, if you can. Sprinkle with 10X sugar before serving.
