Ingredients

 Ground beef1 Ounce
 Zucchini1/2 Cup (16 tbs)
 Onion1 , finely chopped
 Egg1
 Rice1/4 Cup (16 tbs), uncooked
 Dash oregano, cumin, garlic, salt, pepper
 Beef broth1 Cup (16 tbs)
 Tomato1 Large, diced
 Parsley1 Teaspoon, chopped
 Salt To Taste
 Pepper To Taste

Directions

Combine ground beef, zucchini, onion, egg, rice, and seasonings; mix thoroughly.
Shape into small meatballs.
Combine beef broth, tomato, and parsley in saucepan; heat to boil.
Drop meatballs into hot broth, one at a time.
Cover and simmer 30 to 40 minutes.
Add salt and pepper.
