Zucchini Latkes With Tomato Paste Sauce And Thin Yogurt Recipe
Ingredients
| Zucchinis | 2 , grated | |
| Flour | 1 Tablespoon | |
| Pepper | 1 Teaspoon | |
| Tarragon | 1 Teaspoon | |
| Egg | 1 | |
| Olive oil | 2 Tablespoon | |
| Yoghurt | 3 Tablespoon | |
| Tomato Paste | 1 Teaspoon | |
| Juice of 1/2 lemon | ||
Directions
GETTING READY
1) In a bowl, stir in the grated zucchini, flour, tarragon and pepper. Whisk egg to this mixture. Keep it aside.
MAKING
2) In a fry pan, add oil to heat up over medium heat. Spoon the mixture separately in the heated oil.
3) Using the spatula, pat these down and fry to brown on both sides.
FINALIZING
4) In a small bowl, combine yoghurt, tomato paste and lemon juice, all together. Whisk up the mixture for preparing the sauce.
SERVING
5) In a serving plate, spread the sauce and place the latkes over the sauce to serve.
