Directions
1. In food processor, put garlic and chop. Then, add cilantro and pulse.
2. Throw zucchini in processor, and chop it finely.
MAKING
3. In a large bowl, transfer zucchini mixture, add eggs, and mix well.
4. Drop salt, pepper, cayenne, and flour in it. Mix to combine.
5. Place a pan on medium high heat, pour oil, and drop batter in it, about 1 tablespoon at a time. Flatten, and cook for about 2 minutes per side or until golden brown.
6. Remove from pan, and place fritters on paper towel.
SERVING
7. Serve zucchini fritters hot.
