1 1/2 cups all purpose flour
 
2 teaspoons baking powder
 
3/4 teaspoon salt
 
1 beaten egg
 
1 cup milk
 
1 cup finely chopped zucchini
 
Fat for frying
 
2 tablespoons butter or margarine
 
2 tablespoons all purpose flour
 
1/4 teaspoon salt
 
Dash pepper
 
1 1/4 cups milk
 
1/2 cup shredded sharp American cheese
 
1/2 cup shredded Swiss cheese

Directions

In mixing bowl stir together 1 1/2 cups flour, baking powder, and 3/4 teaspoon salt.
Combine egg, 1 cup milk, and zucchini.
Add to dry ingredients in mixing bowl; stir just till moistened.
Drop batter from tablespoon into deep hot fat.
Fry, a few at a time, for 3 to 4 minutes.
Drain and keep warm.
In saucepan melt butter over low heat.
Blend in 2 tablespoons flour, 1/4 teaspoon salt, and pepper.
Add 1 1/4 cups milk all at once.
Cook and stir till thickened and bubbly.
Add cheeses, stirring till melted.
Spoon over fritters.
