Zucchini Florentine Recipe

Ingredients
4 small zucchini
2 tsp margarine
1 cup fresh spinach, chopped
1 cup skim milk
3 eggs slightly beaten
1 tsp salt
1/4 tsp pepper
1/4 tsp thyme
1/4 tsp paprika
Directions
Cut zucchini into thin slices.
Melt margarine in baking dish; add zucchini.
Bake at 400°F (200°C) for 15 minutes.
Add spinach.
Blend skim milk, eggs, salt, pepper, and thyme.
Pour over vegetables.
Sprinkle with paprika.
Bake at 350°F (175°C) for 40 minutes, or until set.
Melt margarine in baking dish; add zucchini.
Bake at 400°F (200°C) for 15 minutes.
