Zucchini Cookies Recipe

Ingredients
1 1/2 cups whole wheat floor
1 3/4 cups quick rolled oats
1/8 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup raisins
1/2 cup unsweetened flaked coconut
1/2 cup butter, softened
3/4 cup brown sugar
1 egg
1/2 teaspoon pure vanilla extract
1 cup grated raw zucchini
Directions
1. Preheat the oven to 375 degrees.
2. Mix together the flour, oats, salt, baking soda, cinnamon, raisins, and coconut.
3. Cream the butter and sugar until blended. Beat in the egg. Stir in the vanilla.
4. Stir in the dry ingredients and zucchini, mixing well.
5. Drop by rounded teaspoons about 2 inches apart onto oiled baking sheets (cookies do not spread).
6. Bake for 10 to 12 minutes, or until well browned. Remove to wire racks to cool.
