Zucchini Cheese Salad Recipe
Ingredients
| Plain unflavored yogurt-2 tablespoons | ||
| Dijon-style mustard and prepared horseradish-1/2 teaspoon each | ||
| Salt and pepper-dash each | ||
| Zucchini and celery-1/2 cup each coarsely shredded | ||
| Carrot-1/4 cup-coarsely shredded | ||
| Radishes-4 -coarsely shredded | ||
| Low-fat American cheese-2 ounces -cut into thin strips | ||
| Iceberg or romaine lettuce leaves-2 | ||
Directions
MAKING
1. In a large bowl, place the yogurt, mustard, horseradish, salt, and pepper and mix well
2. Place the shredded vegetable in the bowl and mix well
3. Add the cheese and mix well again
SERVING
4. Serve cold
