Zucchini Celery and Apple Salad Recipe
Ingredients
| Zucchini | 2 1/2 Pound, thinly sliced | |
| Celery stalks | 10 , thinly sliced | |
| 4 large crisp green apples, cored and chopped | ||
| 1 1/4 cups thick plain yogurt | ||
| Lemon juice | 3/4 Cup (16 tbs) (DRESSING) | |
| 3 tablespoons finely grated lemon rind | ||
| Dijon Mustard | 1/2 Cup (16 tbs) (DRESSING) | |
| 3 tablespoons chopped fresh thyme or 1 1/2 tablespoons dried | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Make the dressing by blending the yogurt, lemon juice and rind and mustard together.
Stir in the thyme and seasoning.
Cover and chill.
Toss the salad ingredients together.
Pour the dressing over and toss again lightly.
