Sweet Zucchini Bread Recipe
Ingredients
| All purpose flour | 250 Milliliter | |
| Whole wheat flour | 125 Milliliter | |
| Baking powder | 5 Milliliter | |
| Baking soda | 5 Milliliter | |
| Cinnamon | 5 Milliliter | |
| Salt | 2 Milliliter | |
| Brown sugar | 50 Milliliter | |
| Sugar | 25 Milliliter | |
| Vegetable oil | 80 Milliliter | |
| Zucchini | 250 Milliliter, grated | |
| Juice and grated rind of 1 orange | ||
Directions
Sift flour, Sugar Twin, soda, baking powder, salt and cinnamon.
Whisk egg, add oil, orange juice, rind and zucchini.
Stir into dry ingredients.
Spray loaf pan with Pam.
Bake at 350°F.
If the zucchini is very young, let it stand a while after grating and pour off some of the liquid.
An overgrown zucchini is dryer.
Should cut into about 18 slices.
Freezes well.
1 1/2 slice equals 1 starchy choice, 1 fat and oil choice.
