 All purpose flour250 Milliliter
 Whole wheat flour125 Milliliter
 Baking powder5 Milliliter
 Baking soda5 Milliliter
 Cinnamon5 Milliliter
 Salt2 Milliliter
 Brown sugar50 Milliliter
 Sugar25 Milliliter
 Vegetable oil80 Milliliter
 Zucchini250 Milliliter, grated
 Juice and grated rind of 1 orange

Directions

Sift flour, Sugar Twin, soda, baking powder, salt and cinnamon.
Whisk egg, add oil, orange juice, rind and zucchini.
Stir into dry ingredients.
Spray loaf pan with Pam.
Bake at 350°F.
If the zucchini is very young, let it stand a while after grating and pour off some of the liquid.
An overgrown zucchini is dryer.
Should cut into about 18 slices.
Freezes well.
1 1/2 slice equals 1 starchy choice, 1 fat and oil choice.
